The first meal I cooked since being home from the hospital after open heart surgery, yayy!!
This was extremely easy and pretty quick to make!
For the chicken I used chicken breast tenderloins and laid them out on a baking sheet lined with aluminum foil. Sprinkled a bit of garlic salt and crackled black pepper on top and baked in 350 degree oven for 20 minutes.
Broccoli and portabella mushroom “fries” were done together on the same tray also at 350 degrees.
Slice mushrooms into strips and remove the bottom part of the cap from it (the dark colored part). Do not cut into smaller lengths, they will shrink when cooked. Lay on foil lined sheet, spritz with olive oil spray and top with salt and cracked black pepper. Flip every 6-7 minutes while cooking until the outsides become crisp.
For the broccoli, cut into smaller pieces from the head. Lay out on foil lined baking sheet, spritz olive oil spray, and sprinkle with salt and cracked black pepper. Flip when you flip the mushrooms, but remove after 3-4 turns.
